I have heard of substituting Greek Yogurt for mayonnaise in recipes before but I have always been a little hesitant. Well, I am sold now. My chicken salad turned out so delicious. I might even like it better than the traditional version with mayonnaise. My favorite part is that greek yogurt has no fat and a 6 ounce container of it only has 100 calories. This recipe uses even less than the 6 oz package. Woohoo!
Greek Yogurt Chicken SaladIngredients:
2 cups chopped chicken - I used leftover rotisserie chicken.
1/3 heaping cup celery
1/4 cup slivered almonds
1/4 cup dried cranberries
1/4 cup plain Greek yogurt
Pepper to taste
1. Combine the chicken, celery, almonds, and cranberries in a bowl.
2. Add the Greek yogurt and stir until everything is coated in yogurt.
3. Add pepper to taste. I personally like a lot.
4. Keep refrigerated until ready to serve.
This recipe is really versatile, you can add or subtract any of the extra ingredients that you like. I went pretty heavy on the celery because I like the crunch and I was viewing it a little like filler. It's inexpensive and low in calories. Double bonus!
