Football Rice Crispy Ice Cream Sandwiches
Celebrate the Big Game, AKA the Super Bowl, with some delicious football shaped ice cream sandwiches. Contains affiliate links.
Ingredients
- 3 Tbsp margarine
- 10 oz bag mini marshmallows
- 6 cups cocoa rice cereal
- ½ gallon vanilla ice cream
- sprinkles - optional
- Football cookie cutter
Instructions
Ice Cream
- Line a 9x9 sheet with parchment paper. Leave two ends sticking up over the end of the pan.
- Remove ice cream from freezer and allow it to soften about 10 minutes. Scoop ½ of a ½ gallon of vanilla ice cream into the pan. Spread into an even layer and return to the freezer.
- Freeze for at least 3 hours.
Rice Crispy Footballs
- Heat margarine over low heat in a five quart or larger saucepan. When the margarine has completely melted, add the marshmallows. Heat the marshmallows until completely melted, stirring occasionally. Remove from heat.
- Stir in the chocolate crispy cereal until the cereal is completely covered in marshmallows. Turn the mixture out onto a greased ½ baking sheet. Press into a flat layer with a greased spoon or hands.
- Allow the rice crispy treats to cool 15 minutes.
- Cut out 8 football shapes. Keep covered until time to serve.
- When it's time to serve the sandwiches, remove the ice cream from the freezer. Cut 4 football shapes from the ice cream and sandwich in between two rice crispy footballs. Enjoy immediately.
You can give these treats a fun twist by covering the ice cream in sprinkles. We aren’t rooting for a particular team in the Super Bowl this year, but it would be fun to coordinate the sprinkles to your team!
This year is the first year we have really enjoyed watching some football as a family. In the past, it has not been my favorite sport. The kids are also getting old enough to understand the rules and get excited too. Our Arizona Cardinals had an awesome season, which helps when your home town team is doing great. We were so sad when they lost the NFC championship game. It’s okay, there’s always next year!
