Mermaid Lunch with Goldfish Crackers

Ingredients
  • 2 Whole wheat tortillas, soft taco size
  • Shredded Cheese
  • Goldfish Crackers
  • 1 String Cheese stick
  • 1 Pepperoni
  • ¼ tsp light mayonnaise or low fat sour cream
  • 1 leaf of Lettuce, iceberg, romaine, or green leaf lettuce
  • Blue or Black and Red Food Coloring Marker

Instructions
  1. Melt shredded cheese between the two whole wheat tortillas to make a quesadilla. You can add sandwich meat or other ingredients if you like. You just want to make sure the tortillas are going to stick together with melted cheese or another sticky ingredient like peanut butter or low-fat cream cheese.
  2. Cut out the Mermaid body template and trace on the backside of the quesadilla with a food coloring marker. Use kitchen shears or a knife to cut out the mermaid body.
  3. Pull the string cheese into thin strips for the hair. Cut a larger section of cheese into a strip and add small cuts for the mermaid's bangs.
  4. Use kitchen shears to cut a lip shape from the pepperoni.
  5. With food coloring markers add eyes and a nose to the mermaid's face.
  6. Take a toothpick and dab on small amounts of mayo or sour cream to add some dimension to the mermaid's eyes.
  7. Place two Goldfish crackers tip to tip for the mermaid top.
  8. Form a mermaid tail with the colorful Goldfish crackers. Start with 3 crackers at the waist and slowly taper down to the end of the mermaid tail. Turn two Goldfish crackers the opposite direction to act as fins on the mermaid's tail.
  9. Add a few strips of lettuce to each side of the plate for seaweed.
