Buffalo Chicken Pasta Salad

Spice up your chicken pasta salad with buffalo wing sauce and cool it back down with blue cheese, ranch, and celery for crunch.

Ingredients
  • 2 cups cooked chopped chicken, I love using rotisserie chicken for this
  • 1 12 oz bottle buffalo wing sauce
  • 1 16 oz bottle blue cheese dressing
  • 1 packet ranch seasoning mix, about 3 Tbsp
  • 1 cup blue cheese crumbles
  • 1 lb penne pasta, or pasta of your choice
  • 1 cup chopped celery stalks
  • 8 oz grape tomatoes
Instructions
  1. Cook penne according to package directions. While the pasta is boiling, prep other ingredients.
  2. Once tender, drain the penne and set aside.
  3. Stir the buffalo sauce, blue cheese dressing, and ranch seasoning together until completely combined.
  4. Pour ½-2/3 of the sauce over the cooked penne and stir to coat. Save the remaining sauce and refrigerate.
  5. Toss in the chicken, blue cheese crumbles, celery, and grape tomatoes.
  6. Refrigerate 3 hours or until cold before serving.
  7. Before serving, add additional sauce if desired. The pasta tends to soak up the sauce. Alternately, serve the pasta salad with the extra sauce on the side for anyone that likes their pasta extra saucy.
