Heat the olive oil in a large skillet on medium high heat. Brown the sausage on all sides, approximately 12 minutes. Remove the sausage from the pan and set aside.
While the sausage is browning, slice the bell peppers and onion. Turn the heat up to high and add the peppers and onions to the pot. Stir frequently, cook the vegetables until they are soft. This will take approximately 5-7 minutes.
Turn the heat back down to medium and add the tomato paste, chopped garlic, and tomato paste. Add the sausage back into the pan. Cook everything together for about 5 minutes, or until the sauce thickens.
Serve the sausage and peppers on a hoagie roll, over pasta, or just on their own.
