Bean Sprout Fried RiceYield: 4 servings
¼ cup chopped onion
1 lb ground beef or turkey
1 cup steamed rice - use Minute Rice to stay within 15 minutes
1 lb of fresh bean sprouts - My grocery store only sold it in a 12 ounce bag, so that's what I bought.
2 tablespoons soy sauce
- Cook the minute rice in a pot, following the cooking directions on the box. Meanwhile, in a 12" skillet, cook the ground beef and onions.
- Remove the ground beef and onion mixture from the pan and drain most of the fat. Scramble the two eggs in the same pan you just cooked the beef in.
- After the eggs are done, combine all the meat/onion mixture, rice, fresh bean sprouts, and soy sauce.
- Stir it constantly until the bean sprouts are hot, about 3-4 minutes. Serve.
